Description

Delightful and gooey cinnamon roll bites made with sourdough discard, perfect for reducing waste while satisfying your sweet cravings.


Ingredients

  • 1 cup sourdough discard (unfed, 100% hydration)
  • 2 cups all-purpose flour, plus more for dusting
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 cup melted butter or coconut oil
  • 1/3 cup warm milk (dairy or plant-based)
  • 1/4 cup softened butter (for filling)
  • 1/2 cup brown sugar (for filling)
  • 1 tablespoon ground cinnamon (for filling)
  • 1/2 teaspoon vanilla extract (for filling)
  • 4 ounces cream cheese, softened (for glaze)
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. In a large mixing bowl, combine the sourdough discard, flour, sugar, salt, baking powder, melted butter, and warm milk. Stir until a dough starts to form.
  2. Turn the dough out onto a lightly floured surface and knead gently for about 2 to 3 minutes until smooth. Let it rest for 30 minutes.
  3. Roll the dough into a rectangle that’s about 1/4 inch thick. Spread softened butter over the surface, then sprinkle brown sugar, cinnamon, and vanilla extract evenly across.
  4. Starting from one long side, roll the dough tightly into a log. Slice the log into 1-inch pieces.
  5. Preheat your oven to 375°F. Place the bites on a baking sheet and bake for 18 to 20 minutes or air fry at 350°F for 10 to 12 minutes until golden brown.
  6. While the bites are baking, whisk together the glaze ingredients. Once the bites are out of the oven, drizzle the glaze on while still warm.

Notes

Serve warm with fresh fruit or coffee. Can be frozen for up to a month and reheated.
