Description

Delightful and buttery shortbread cookies that practically dissolve in your mouth, perfect for tea time or a cozy evening at home.

Ingredients

Scale
  • 1 cup butter (softened)
  • 3/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour

Instructions

  1. Preheat your oven to 325°F (163°C) and line two baking sheets with parchment paper.
  2. In a stand mixer, combine softened butter, powdered sugar, vanilla extract, and flour, mixing slowly until a crumbly dough forms.
  3. Shape the dough into a ball, roll it out between parchment paper to about 1/3 to 1/2-inch thickness, and cut out shapes with a cookie cutter.
  4. Transfer the cookies to prepared baking sheets and bake for 12 to 15 minutes, until the bottoms are just golden brown.
  5. Cool on baking trays for 5 minutes before moving to wire racks to cool completely.

Notes

Store leftover cookies in airtight containers for up to five days. For longer storage, freeze them in a freezer-safe bag for up to three months.
