  • 1 tbsp heavy cream (optional, for consistency)

Instructions

  1. Prepare the Cookie Dough: In a large bowl, mix flour, cocoa powder, cornstarch, baking soda, and salt. In another bowl, cream butter, white sugar, and brown sugar until fluffy. Add egg, vanilla extract, vinegar, and red food coloring, then mix until combined. Gradually add the dry ingredients, stirring until a soft dough forms.
  2. Shape and Bake: Preheat oven to 375°F (190°C) and line two baking sheets with parchment paper. Form balls of dough and place them on the sheets, ensuring space between each. Bake for 8-10 minutes or until edges are set and centers are soft. Cool on sheets for a few minutes before transferring to wire racks to cool completely.
  3. Make the Cream Cheese Frosting: Beat softened butter, vegetable shortening, and cream cheese in a clean bowl. Gradually add powdered sugar and salt, mixing until creamy. Adjust consistency with heavy cream as needed.
  4. Assemble the Sandwich Cookies: Spread a dollop of frosting on one cookie and top with another cookie, pressing gently to create a sandwich. Repeat with remaining cookies.
