Description

Red Velvet Cake Cookies combine the delightful flavors of red velvet cake and the charm of cookies, filled with creamy frosting and decorated for any occasion.


Ingredients

  • ¾ cup light brown sugar (150 g)
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon red food color
  • 1 cup all-purpose flour (135 g)
  • 2 tablespoons cocoa powder (12 g)
  • ½ teaspoon kosher salt
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • Melted butter and extra flour for the pan
  • 4 ounces cream cheese (room temperature, 113 g)
  • 1 teaspoon pure vanilla extract (for filling)
  • ½ cup powdered sugar (50 g)
  • Christmas sprinkles for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet by greasing it with melted butter and dusting it with flour.
  2. In a mixing bowl, cream together the unsalted butter and light brown sugar until fluffy and well combined.
  3. Add in the egg, vanilla extract, and red food color, mixing thoroughly until the colors blend perfectly.
  4. In another bowl, mix together the all-purpose flour, cocoa powder, salt, baking soda, and baking powder. Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined.
  5. Using a cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them a few inches apart.
  6. Bake in the oven for about 10-12 minutes or until the edges are set. Remove from the oven and allow the cookies to cool completely on a wire rack.
  7. To make the cream cheese filling, combine softened cream cheese, vanilla extract, and powdered sugar in a bowl. Beat until smooth and creamy.
  8. Once the cookies are cool, gently spread or pipe the cream cheese filling onto half of the cookies, then top with the other half to create your cookie sandwiches.
  9. For a festive touch, sprinkle some Christmas sprinkles on top!
