- ¾ cup light brown sugar (150 g)
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 tablespoon red food color
- 1 cup all-purpose flour (135 g)

- ½ teaspoon kosher salt
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- Melted butter and extra flour for the pan
- 4 ounces cream cheese (room temperature, 113 g)
- 1 teaspoon pure vanilla extract (for filling)
- ½ cup powdered sugar (50 g)
- Christmas sprinkles for decoration
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet by greasing it with melted butter and dusting it with flour.
- In a mixing bowl, cream together the unsalted butter and light brown sugar until fluffy and well combined.
- Add in the egg, vanilla extract, and red food color, mixing thoroughly until the colors blend perfectly.
- In another bowl, mix together the all-purpose flour, cocoa powder, salt, baking soda, and baking powder. Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined.
- Using a cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them a few inches apart.
- Bake in the oven for about 10-12 minutes or until the edges are set. Remove from the oven and allow the cookies to cool completely on a wire rack.
- To make the cream cheese filling, combine softened cream cheese, vanilla extract, and powdered sugar in a bowl. Beat until smooth and creamy.
- Once the cookies are cool, gently spread or pipe the cream cheese filling onto half of the cookies, then top with the other half to create your cookie sandwiches.
- For a festive touch, sprinkle some Christmas sprinkles on top!
