Description

A delightful blend of creamy cheesecake and vibrant raspberry puree, these bars are perfect for any occasion.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup raspberry puree
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 325°F (160°C). Grease an 8×8 inch baking pan.
  2. In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar, pressing into the bottom of the pan to create a crust.
  3. In a large bowl, beat the cream cheese until smooth. Add sugar and vanilla extract, mixing until fully combined.
  4. Add eggs one at a time, mixing on low until just combined.
  5. Pour half of the cheesecake mixture over the crust and drizzle half of the raspberry puree on top, gently swirling with a knife. Repeat with remaining mixture and puree.
  6. Bake for 25 to 30 minutes, or until set. Let cool completely, then refrigerate for at least 4 hours.
  7. Cut into bars and serve chilled.

Notes

Top with whipped cream, fresh raspberries, or a dusting of powdered sugar for added presentation.
