- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 16 oz cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup raspberry puree
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 325°F (160°C). Grease an 8×8 inch baking pan.
- In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar, pressing into the bottom of the pan to create a crust.
- In a large bowl, beat the cream cheese until smooth. Add sugar and vanilla extract, mixing until fully combined.
- Add eggs one at a time, mixing on low until just combined.
- Pour half of the cheesecake mixture over the crust and drizzle half of the raspberry puree on top, gently swirling with a knife. Repeat with remaining mixture and puree.
- Bake for 25 to 30 minutes, or until set. Let cool completely, then refrigerate for at least 4 hours.
- Cut into bars and serve chilled.
Notes
Top with whipped cream, fresh raspberries, or a dusting of powdered sugar for added presentation.
