- 3 cups puffed quinoa

Instructions
- Prepare a baking sheet lined with parchment paper or spray a mini muffin tin with cooking spray.
- Melt the chocolate using a double boiler or microwave in short bursts until smooth. Optionally add peanut butter for creaminess.
- Mix in the puffed quinoa until well combined and coated with chocolate.
- Spoon the mixture onto the baking sheet or into muffin tin slots. Sprinkle with flaky salt if desired.
- Refrigerate for about 30 minutes or until firm.
Notes
Store in an airtight container for about a week at room temperature or in the fridge to prevent melting. Layer with parchment paper to avoid sticking.
