Ingredients

  • 1/4 teaspoon salt
  • 1/2 cup pistachio paste
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Chopped pistachios for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a mixing bowl, beat the eggs and granulated sugar until light and fluffy.
  3. Sift the flour, baking powder, and salt together, then gently fold into the egg mixture.
  4. Spread the batter evenly in the prepared pan and bake for 12-15 minutes until golden.
  5. Prepare a kitchen towel dusted with powdered sugar.
  6. Once baked, invert the cake onto the towel and roll it up while warm.
  7. In a bowl, whip the heavy cream with powdered sugar and vanilla until stiff peaks form, then fold in pistachio paste.
  8. Unroll the cooled cake, spread the pistachio cream filling, and roll it back up seam-side down.
  9. Chill the roll cake in the refrigerator for at least 1 hour before slicing.
  10. Garnish with chopped pistachios before serving.
