Instructions
- Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
- In a mixing bowl, beat the eggs and granulated sugar until light and fluffy.
- Sift the flour, baking powder, and salt together, then gently fold into the egg mixture.
- Spread the batter evenly in the prepared pan and bake for 12-15 minutes until golden.
- Prepare a kitchen towel dusted with powdered sugar.
- Once baked, invert the cake onto the towel and roll it up while warm.
- In a bowl, whip the heavy cream with powdered sugar and vanilla until stiff peaks form, then fold in pistachio paste.
- Unroll the cooled cake, spread the pistachio cream filling, and roll it back up seam-side down.
- Chill the roll cake in the refrigerator for at least 1 hour before slicing.
- Garnish with chopped pistachios before serving.
