- 2 cups white chocolate melting wafers
- 1/4 cup butter (cut into pieces)
- 2/3 cup powdered sugar
- 1 (3.4-ounce) box instant pistachio pudding mix
- 1/4 teaspoon almond extract
Instructions
- Prep the ingredients: Start by placing the Rice Chex cereal into a large mixing bowl. Set it aside. Line a work surface or baking sheet with parchment paper or wax paper.
- Mix the sugar and pudding: In a gallon-sized zip-top bag, combine the powdered sugar and dry pistachio pudding mix. Seal and shake to mix.
- Add almond extract: Open the bag, pour in the almond extract, seal it again, and shake to mix.
- Melt the chocolate: In a microwave-safe bowl, combine the white chocolate melting wafers and butter. Microwave for 30 seconds, stir, and continue in 15-second increments until melted.
- Coat the cereal: Pour the melted chocolate over the Rice Chex and stir until evenly coated.
- Shake and coat: Transfer the mixture into the zip-top bag with the sugar and pudding mix, seal, and shake until coated.
- Let it cool: Spread the coated cereal out onto the lined surface to cool completely.
