Ingredients

- 2 cups fresh pistachios (shelled and unsalted)
- 8 oz dark chocolate
- 1 cup heavy cream
- 1/4 cup sugar
- 1 tsp vanilla extract
- A pinch of salt
- 1 tbsp gelatin
- 2 tbsp water
Instructions
- Finely grind the fresh pistachios in a food processor until they reach a fine powder consistency. Set aside.
- In a saucepan, heat the heavy cream until it simmers. Add the sugar, salt, and vanilla extract, stirring until the sugar is completely dissolved.
- Remove the cream mixture from the heat and add the ground pistachios, stirring well to combine. Allow the mixture to cool slightly.
- In a separate bowl, bloom the gelatin by sprinkling it over the water and letting it sit for a few minutes. Then, gently heat the mixture until the gelatin dissolves completely.
- Combine the gelatin mixture with the pistachio cream, stirring until well incorporated. Divide the mixture into serving glasses and refrigerate until set.
Notes
Use high-quality pistachios and dark chocolate for the best flavor. Chill thoroughly for best results.
