Description

A dreamy blend of creamy pistachio flavors topped with a luscious chocolate ganache.


Ingredients

Scale
  • 2 cups fresh pistachios (shelled and unsalted)
  • 8 oz dark chocolate
  • 1 cup heavy cream
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • A pinch of salt
  • 1 tbsp gelatin
  • 2 tbsp water

Instructions

  1. Finely grind the fresh pistachios in a food processor until they reach a fine powder consistency. Set aside.
  2. In a saucepan, heat the heavy cream until it simmers. Add the sugar, salt, and vanilla extract, stirring until the sugar is completely dissolved.
  3. Remove the cream mixture from the heat and add the ground pistachios, stirring well to combine. Allow the mixture to cool slightly.
  4. In a separate bowl, bloom the gelatin by sprinkling it over the water and letting it sit for a few minutes. Then, gently heat the mixture until the gelatin dissolves completely.
  5. Combine the gelatin mixture with the pistachio cream, stirring until well incorporated. Divide the mixture into serving glasses and refrigerate until set.

Notes

Use high-quality pistachios and dark chocolate for the best flavor. Chill thoroughly for best results.
