Indulge in the delightful mashup of rich chocolate brownie goodness layered with crispy kunafa and infused with luscious pistachio flavor.
Ingredients

- 1/2 cup (120gm) softened unsalted butter
- 1 cup (180gm) light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup (40gm) cocoa powder
- 1/2 tsp (2gm) baking powder
- 1/2 cup (60gm) flour
- 1/8 tsp or a pinch of salt
- 3/4 cup (200gm) pistachio spread
- 1 cup (90gm) kunafa pastry
- 1 Tbsp butter or ghee, for roasting kunafa dough
- 1 cup (180gm) semi-sweet or dark chocolate
Instructions
- Preheat the oven to 350°F (175°C). Cream together softened butter and brown sugar until light and fluffy. Add eggs and vanilla, mixing well. Gradually stir in cocoa powder, flour, baking powder, and salt until combined. Pour the brownie batter into a greased baking dish.
- In a separate bowl, combine pistachio spread with melted butter or ghee. Mix well.
- Melt the chocolate in a microwave or double boiler until smooth.
- Pour the melted chocolate over the brownie layer, then spread the pistachio mixture on top.
- Break the kunafa into pieces, mix with melted butter, and layer over the pistachio spread. Bake for 25-30 minutes or until golden brown.
- Allow to cool, slice into squares, and enjoy!
Notes
Dust with powdered sugar for presentation and serve warm with ice cream for an extra treat.
