- 1 cup crushed pineapple, drained
- 1 cup flour
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup shredded coconut
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a square baking pan.
- In a large bowl, mix together the melted butter, sugar, and brown sugar until well combined.
- Add the eggs and vanilla extract, stirring until blended.
- In a separate bowl, whisk together the flour, baking powder, and salt. Fold this dry mixture into the wet ingredients until just combined.
- Fold in the crushed pineapple and shredded coconut, adding walnuts if desired.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
- Let cool before slicing into squares.
