Description

A delightful treat that combines the classic flavors of pecan pie in a crunchy, chewy bark form, perfect for sharing during holidays or gatherings.


Ingredients

  • 1 cup pecans (coarsely chopped)
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips
  • 1/2 cup unsweetened peanut butter
  • 1/4 cup light corn syrup
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare your pan by lining a baking sheet with parchment paper for easy cleanup.
  2. In a saucepan over low heat, mix together the semi-sweet chocolate chips, butterscotch chips, and peanut butter until smooth and fully melted.
  3. In another bowl, mix together the corn syrup, brown sugar, salt, and vanilla extract until well combined.
  4. Fold the coarsely chopped pecans into the chocolate mixture until evenly coated.
  5. Pour the mixture onto the prepared baking sheet and spread it into an even layer about 1/2 inch thick.
  6. Place the baking sheet in the refrigerator for 1-2 hours until the bark has fully set and is firm.
  7. Once set, lift the Pecan Pie Bark from the pan using the parchment paper and cut it into squares or break it into pieces.

Notes

Store Pecan Pie Bark in an airtight container at room temperature for up to a week. For longer storage, wrap individual pieces and freeze for up to three months.
