Description

Ingredients

  • 2 to 3 fresh pears, peeled and sliced
  • 1 cup almond flour
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon almond extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition, then stir in the vanilla and almond extracts.
  4. In another bowl, combine the almond flour, all-purpose flour, baking powder, and salt. Gradually mix this into the wet ingredients until just combined.
  5. Gently fold in the sliced pears into the batter.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
