- 2 to 3 fresh pears, peeled and sliced
- 1 cup almond flour
- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon almond extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition, then stir in the vanilla and almond extracts.
- In another bowl, combine the almond flour, all-purpose flour, baking powder, and salt. Gradually mix this into the wet ingredients until just combined.
- Gently fold in the sliced pears into the batter.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
