- 1/2 cup granulated sugar
- 1/3 cup all-purpose flour
- 1/4 teaspoon salt
- 2 large eggs, beaten
- 1 teaspoon vanilla extract
- 8 oz vanilla wafers
- 3 ripe bananas, sliced
Instructions
- In a medium saucepan, whisk together the granulated sugar, flour, and salt.
- Gradually stir in the milk, cooking over medium heat while stirring constantly until thickened and gently boiling.
- Beat the eggs in a separate bowl, tempering them with a small amount of the hot pudding mixture.
- Slowly pour the tempered egg mixture back into the saucepan while stirring constantly, cooking for an additional minute.
- Remove from heat and stir in the vanilla extract.
- In a serving dish, layer vanilla wafers, banana slices, and creamy pudding, repeating layers until topped with pudding.
- Cover and refrigerate for at least 2 hours before serving.
Notes
For best results, add banana slices right before serving to keep them fresh.
