Delicious no-bake cheesecake bars combining creamy pistachio and a rich chocolate crust.

- 1 1/2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 cup pistachio paste
- 1/2 cup heavy cream
- 1 cup chocolate ganache
Instructions
- Grease a 9×9 inch baking dish.
- Mix chocolate cookie crumbs and melted butter in a bowl, then press into the bottom of the dish to form a crust.
- Beat softened cream cheese and powdered sugar until smooth and creamy.
- Stir in pistachio paste until combined.
- Whip the heavy cream in a small bowl until soft peaks form, then fold it gently into the pistachio mixture.
- Spread the pistachio filling over the chocolate cookie base.
- Chill in the refrigerator for at least 2 hours until set.
- Prepare chocolate ganache and pour it over the set pistachio layer.
- Chill again until the ganache is firm.
- Slice into bars and serve.
Notes
Garnish with crushed pistachios or a drizzle of chocolate sauce for extra flavor and presentation.
