- 1/2 cup graham cracker crumbs (for rolling)
Instructions
- Begin by finely chopping the pecans.
- In a large bowl, combine the finely chopped pecans with softened cream cheese and powdered sugar. Stir until smooth.
- Stir in the vanilla extract.
- Gently fold in the mini chocolate chips.
- Scoop out portions of the mixture and roll them into balls (about one inch in diameter).
- Roll each ball in graham cracker crumbs until fully coated.
- Chill the Pecan Pie Balls on a parchment-lined baking sheet for 30 minutes before serving.
