Delicious and easy to make, these No Bake Keto Coconut Bars are a sweet, low-carb treat that fits perfectly into your keto lifestyle.


Ingredients

Scale
  • 1 cup unsweetened shredded coconut
  • 1/2 cup almond flour
  • 1/3 cup coconut oil, melted
  • 1/4 cup erythritol (or another keto-friendly sweetener)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: dark chocolate for drizzling

Instructions

  1. In a mixing bowl, combine the shredded coconut, almond flour, erythritol, and salt.
  2. Add melted coconut oil and vanilla extract to the dry ingredients and mix until well combined.
  3. Press the mixture into an 8×8 inch baking dish lined with parchment paper.
  4. Refrigerate for about 30 minutes until firm.
