- 1 cup unsweetened shredded coconut
- 1/2 cup almond flour
- 1/3 cup coconut oil, melted
- 1/4 cup erythritol (or another keto-friendly sweetener)
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional: dark chocolate for drizzling
Instructions
- In a mixing bowl, combine the shredded coconut, almond flour, erythritol, and salt.
- Add melted coconut oil and vanilla extract to the dry ingredients and mix until well combined.
- Press the mixture into an 8×8 inch baking dish lined with parchment paper.
- Refrigerate for about 30 minutes until firm.
- Optional: Melt dark chocolate and drizzle it over the top before cutting into bars.
- Cut into squares and enjoy!
