Ingredients

  • 1 tablespoon vanilla protein powder
  • 1 cup cashew butter
  • 1 tablespoon maple syrup
  • 2 tablespoons pumpkin puree
  • 1 tablespoon pumpkin pie spice

Instructions

  1. In a mixing bowl, combine paleo flour, vanilla protein powder, and pumpkin pie spice. Mix well.
  2. In a microwave-safe bowl, combine cashew butter, maple syrup, and pumpkin puree. Microwave for 30 seconds to 1 minute until smooth.
  3. Pour the wet mixture into the dry ingredients and stir until fully combined.
  4. Cover the bowl and chill the dough in the freezer for 10 minutes.
  5. Roll the chilled dough into small balls, about 20 bites.
  6. Place the balls on a parchment-lined baking sheet.
  7. Refrigerate until fully set, then store in an airtight container.
