Ingredients

- 1 cup of Medjool dates, pitted
- 1 cup of rolled oats
- 1/2 cup of nuts (almonds or walnuts)
- 1/4 cup of nut or seed butter (like almond butter or sunflower seed butter)
- 1 tablespoon of chia seeds (optional)
- 1/2 teaspoon of vanilla extract
- A pinch of salt
- Optional: 1/4 cup of chocolate chips or dried fruit
Instructions
- Place the pitted Medjool dates in the food processor and pulse until they form a sticky ball.
- Add in the rolled oats, nuts, nut butter, chia seeds (if using), vanilla extract, and salt. Blend until it forms a thick mixture; add a teaspoon of water if needed.
- Mix in chocolate chips or dried fruit if desired.
- Scoop out portions and roll them into balls, about 1 inch in diameter.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the fridge until ready to enjoy.
Notes
