Ingredients

  • 1/2 cup white chocolate chips
  • 1 cup mascarpone cheese
  • 1/2 cup shredded coconut
  • 1 tablespoon vanilla extract
  • a pinch of salt
  • 1/4 cup heavy cream
  • 1 cup milk chocolate chips

Instructions

  1. In a microwave-safe bowl or double boiler, melt the white chocolate chips until smooth.
  2. In a separate bowl, mix mascarpone cheese, shredded coconut, melted white chocolate, vanilla extract, and salt until well combined.
  3. Roll the mixture into small balls and place on a parchment-lined tray.
  4. Heat heavy cream in a saucepan until simmering, then pour over the milk chocolate chips and stir until smooth to create ganache.
  5. Dip each coconut ball into the ganache, ensuring they are fully coated, and place back on the tray.
  6. Refrigerate until the ganache is set, about 30 minutes.
