- 1 cup plain full-fat Greek yogurt
- 1 cup granulated sugar
- 3 large eggs
- 1 tablespoon orange zest
- ¼ cup freshly squeezed orange juice
- 1 teaspoon vanilla extract
- ½ cup olive oil
- Icing sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 8.5 x 4.5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, mix the Greek yogurt, sugar, eggs, orange zest, orange juice, and vanilla extract until smooth. Slowly drizzle in the olive oil while mixing.
- Gradually add the dry ingredients to the wet ingredients and stir gently until just combined.
- Pour the batter into the prepared loaf pan and bake for 50-55 minutes, or until a toothpick comes out clean.
- Let the cake cool in the pan for about 20 minutes before transferring to a wire rack. Dust with icing sugar if desired before serving.
