- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking powder

- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon

- 1 cup vegetable oil
- 4 large eggs
- 3 cups grated carrots
- 1 cup crushed pineapple (drained)
- 1/2 cup chopped walnuts or pecans (optional)
- Cream cheese frosting (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.
- In another bowl, mix vegetable oil and eggs together until well blended.
- Gradually add the wet mixture to the dry ingredients and stir until just combined. Fold in grated carrots, drained pineapple, and nuts if using.
- Divide the batter evenly between the two prepared cake pans.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Once cooled, generously frost with cream cheese frosting and enjoy!
