Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chocolate chips (optional)
- Fresh strawberries, blueberry, raspberry, or even peach hulled and finely diced (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a mini muffin pan.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, combine the milk, vegetable oil, egg, and vanilla extract until bubbly.
- Pour wet ingredients into dry ingredients and mix until just combined.
- If using, fold in chocolate chips and diced fruits.
- Spoon the batter into the prepared mini muffin pan, filling each cup about 2/3 full.
- Bake for 12-15 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool slightly before serving.
Notes
Store in an airtight container at room temperature for 3-4 days or freeze for up to 3 months.
