Description

These Mini Fruit Tarts are delightful bite-sized desserts featuring a buttery crust, luscious pastry cream, and a vibrant assortment of fresh fruits.


Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1/4 teaspoon salt
  • 1 cup milk
  • 3 egg yolks
  • 1/4 cup granulated sugar (for pastry cream)
  • 2 tablespoons cornstarch
  • 1/2 teaspoon vanilla extract
  • Assorted fresh fruit (strawberries, blueberries, kiwi, etc.)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, 1/4 cup sugar, and salt. Add the softened butter and egg yolk, then blend until the dough forms a ball.
  3. Press the dough into mini tartlet pans and bake for 15 to 20 minutes or until golden.
  4. While the shells bake, heat the milk in a saucepan until just below boiling. Whisk together the remaining egg yolks, 1/4 cup sugar, and cornstarch in a bowl.
  5. Slowly add the hot milk to the egg mixture while whisking. Return to the saucepan and cook over low heat until thickened. Stir in the vanilla extract.
  6. Once the tart shells are cooled, pour the pastry cream into each shell.
  7. Top with assorted fresh fruit.
  8. Chill until ready to serve.

Notes

Use seasonal fruits for the best flavor and presentation. Consider making the shells and cream ahead of time, and assemble just before serving.
