- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1 egg yolk
- 1/4 teaspoon salt
- 1 cup milk
- 3 egg yolks
- 1/4 cup granulated sugar (for pastry cream)
- 2 tablespoons cornstarch
- 1/2 teaspoon vanilla extract
- Assorted fresh fruit (strawberries, blueberries, kiwi, etc.)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the flour, 1/4 cup sugar, and salt. Add the softened butter and egg yolk, then blend until the dough forms a ball.
- Press the dough into mini tartlet pans and bake for 15 to 20 minutes or until golden.
- While the shells bake, heat the milk in a saucepan until just below boiling. Whisk together the remaining egg yolks, 1/4 cup sugar, and cornstarch in a bowl.
- Slowly add the hot milk to the egg mixture while whisking. Return to the saucepan and cook over low heat until thickened. Stir in the vanilla extract.
- Once the tart shells are cooled, pour the pastry cream into each shell.
- Top with assorted fresh fruit.
- Chill until ready to serve.
Notes
Use seasonal fruits for the best flavor and presentation. Consider making the shells and cream ahead of time, and assemble just before serving.
