Delightful mini banana breads made with overripe bananas and chocolate chips, perfect for a quick breakfast or snack.
Ingredients

- 1 ripe banana, mashed
- 1 medium egg
- 50 grams melted butter
- 2 tablespoons honey
- 150 milliliters milk
- 130 grams self-raising flour
- 40 grams milk chocolate chips
- Spray oil or butter for greasing
Instructions
- Preheat the oven to 180°C (350°F).
- In a large bowl, mix the mashed banana, egg, melted butter, honey, and milk until combined.
- Add the self-raising flour and three-quarters of the chocolate chips, stirring gently until just combined.
- Grease a 12-hole muffin or brownie tin.
- Pour the batter into the tin, filling each hole three-quarters full and sprinkling remaining chocolate chips on top.
- Bake for 18 minutes until golden brown and a skewer inserted comes out clean.
- Allow to cool before removing from the tin.
