Ingredients

- 1 cup graham cracker crumbs (or chocolate cookie crumbs)
- 3 tbsp sugar
- 1/4 cup melted butter
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1/4 cup sour cream
- 1/2 cup semi-sweet or milk chocolate chips (melted)
- 1 egg
- 1/4 cup semi-sweet chocolate chips (for drizzling)
- Whipped cream (optional, for garnish)
- Mini chocolate shavings or sprinkles (optional, for garnish)
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
- Press the mixture into the bottom of mini muffin tins to create a crust.
- In another bowl, beat the softened cream cheese until smooth.
- Add the powdered sugar, vanilla extract, sour cream, melted chocolate chips, and egg. Mix until smooth.
- Pour the cheesecake filling over the crust in the muffin tins, filling each cup evenly.
- Bake for 15-20 minutes, until the centers are set to your liking.
- Remove from oven and let cool completely in the tin.
- Drizzle with melted chocolate chips and garnish with whipped cream and chocolate shavings or sprinkles if desired.
Notes
Use room temperature ingredients for better mixing. Don’t overmix once the egg is added to avoid cracks. Keep an eye on the baking time as every oven varies.
