Description

Delightful mini cheesecakes that are perfect for any occasion, customizable and easy to make.


Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 1/4 cup powdered sugar (optional, for topping)
  • Fresh fruit or chocolate sauce (optional, for topping)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine the graham cracker crumbs and melted butter, mixing until fully coated.
  3. Press the mixture into the bottom of mini cupcake liners or molds for the crust.
  4. In another bowl, beat together cream cheese, granulated sugar, and vanilla extract until smooth.
  5. Add the eggs, one at a time, mixing well after each addition.
  6. Spoon the cream cheese mixture over the crust in the cupcake liners, filling them about three-quarters full.
  7. Bake for 20-25 minutes until edges are set and the center slightly jiggles.
  8. Allow to cool, then refrigerate for at least 2 hours before serving.

Notes

Top with powdered sugar or fresh fruit before serving. Store leftovers in an airtight container in the refrigerator.
