- 1 cup (2 sticks) unsalted butter (softened)
- 0.5 cup granulated sugar
- 2 cups all-purpose flour
- 0.25 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup (2 sticks) unsalted butter
- 1 cup brown sugar (packed)
- 1 can (14 oz) sweetened condensed milk
- 0.25 cup light corn syrup (optional)
- 0.25 teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups chocolate chips (semi-sweet or milk)
- 2 tablespoons butter or heavy cream (for shine)
- Sea salt flakes (optional for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×13-inch pan with parchment paper.
- In a mixing bowl, cream together the softened butter, granulated sugar, and vanilla extract until light and fluffy.
- Gradually mix in the flour and salt until the dough comes together.
- Press the dough evenly into the prepared pan. Bake in the preheated oven for 20–25 minutes, or until the edges are lightly golden.
- While the shortbread bakes, prepare the caramel. In a saucepan, combine the butter, brown sugar, sweetened condensed milk, and corn syrup (if using). Cook over medium heat, stirring constantly, until the mixture becomes thick and golden.
- Remove from heat and stir in the vanilla and salt. Pour the caramel over the baked shortbread and allow it to set for 30–45 minutes.
- Melt the chocolate with the additional butter or cream until smooth. Spread it over the set caramel layer.
- Chill the entire pan in the fridge until firm. Once set, slice into bars and sprinkle with sea salt flakes, if desired.
Notes
Best served with a cup of coffee or tea. Can store at room temperature or refrigerate for up to two weeks.
