Description
If you’ve ever craved a muffin that feels like a soft hug, these fluffy matcha white chocolate muffins are it. This recipe guarantees a pillowy-soft texture and a perfect balance between earthy matcha and creamy white chocolate.
Ingredients
Dry Ingredients:
1 3/4 cups all-purpose flour
2 tablespoons culinary-grade matcha powder
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Wet Ingredients:
1 large egg, room temperature
1 cup whole milk, room temperature
1/2 cup granulated sugar
1/4 cup unsalted butter, melted and cooled
1 teaspoon vanilla extract
Add-Ins:
3/4 cup white chocolate chunks or chips
Instructions
1. Preheat your oven to 400°F (200°C) with a rack in the center. Line a 12-cup muffin tin with paper liners.
2. In a large bowl, whisk together the flour, matcha powder, baking powder, baking soda, and salt. Sift the matcha powder with the flour to prevent clumps.
3. In a separate medium bowl, whisk together the egg, milk, granulated sugar, melted butter, and vanilla extract until smooth.
4. Pour the wet ingredients into the dry ingredients. Use a spatula to gently fold and mix until just combined. A few streaks of flour are fine; do not overmix.
5. Fold in the white chocolate chunks until they are evenly distributed. Do not overmix.
6. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
7. Place the muffin tin in the hot oven and immediately reduce the temperature to 350°F (175°C).
8. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. The tops should be golden and domed.
9. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
10. Serve warm or at room temperature.
Notes
For the fluffiest muffins, ensure your egg and milk are at room temperature. This helps them blend smoothly with the batter.
Do not overmix the batter. Overworking the dough develops gluten, which results in a dense, chewy muffin rather than a soft one.
Sifting the matcha powder with the dry ingredients is a key step to avoid clumps and ensure a vibrant, even green color.
Start baking at a higher temperature for the first 5 minutes to help the muffins achieve a beautiful, domed top.
