A no-bake cheesecake featuring the unique caramelized flavor of Lotus Biscoff cookies combined with a silky cream cheese filling.

- 200g Lotus Biscoff cookies
- 100g unsalted butter, melted
- 400g cream cheese, softened
- 100g powdered sugar
- 200ml whipping cream
- 1 teaspoon vanilla extract
- A few extra Biscoff cookies for decoration
Instructions
- Crush the cookies into fine crumbs and mix with melted butter.
- Press the mixture into the bottom of a springform pan to form a crust.
- Beat softened cream cheese and powdered sugar until smooth.
- Whip the cream with the vanilla extract until soft peaks form, then fold into the cream cheese mixture.
- Spread the filling over the crust and smooth the top.
- Refrigerate for at least 4 hours until set.
- Decorate top with crushed Biscoff cookies before serving.

Serve with caramel or chocolate sauce, whipped cream, or fresh berries for added flavor.
