Description

A no-bake cheesecake featuring the unique caramelized flavor of Lotus Biscoff cookies combined with a silky cream cheese filling.


Ingredients

Scale
  • 200g Lotus Biscoff cookies
  • 100g unsalted butter, melted
  • 400g cream cheese, softened
  • 100g powdered sugar
  • 200ml whipping cream
  • 1 teaspoon vanilla extract
  • A few extra Biscoff cookies for decoration

Instructions

  1. Crush the cookies into fine crumbs and mix with melted butter.
  2. Press the mixture into the bottom of a springform pan to form a crust.
  3. Beat softened cream cheese and powdered sugar until smooth.
  4. Whip the cream with the vanilla extract until soft peaks form, then fold into the cream cheese mixture.
  5. Spread the filling over the crust and smooth the top.
  6. Refrigerate for at least 4 hours until set.
  7. Decorate top with crushed Biscoff cookies before serving.

Notes

Serve with caramel or chocolate sauce, whipped cream, or fresh berries for added flavor.
