- 3 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup crushed Lotus Biscoff cookies
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- Mash bananas in a mixing bowl until smooth.
- Stir in melted butter until well combined.
- Sprinkle in baking soda and salt, and stir to combine.
- Add sugar, egg, and vanilla extract; stir until mixed.
- Gradually incorporate flour, stirring gently until just combined.
- Fold in crushed Lotus Biscoff cookies.
- Pour mixture into the loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick comes out clean.
- Allow to cool before transferring to a wire rack to cool completely.
Notes
Store at room temperature for a couple of days or refrigerate for longer storage. Can be frozen for easy future treats.
