Description

A delightful blend of gooey banana sweetness and the unique crunch of Lotus Biscoff cookies, perfect for any occasion.


Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup crushed Lotus Biscoff cookies

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. Mash bananas in a mixing bowl until smooth.
  3. Stir in melted butter until well combined.
  4. Sprinkle in baking soda and salt, and stir to combine.
  5. Add sugar, egg, and vanilla extract; stir until mixed.
  6. Gradually incorporate flour, stirring gently until just combined.
  7. Fold in crushed Lotus Biscoff cookies.
  8. Pour mixture into the loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Allow to cool before transferring to a wire rack to cool completely.

Notes

Store at room temperature for a couple of days or refrigerate for longer storage. Can be frozen for easy future treats.
