- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sugar
- 1/4 cup lime juice
- 1 tablespoon lime zest
- 1/2 teaspoon vanilla extract
- 1 cup heavy cream
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter, then press into the bottom of a springform pan and bake for 10 minutes. Let cool completely.
- In another bowl, beat cream cheese until smooth, then add 1 cup sugar, lime juice, lime zest, and vanilla extract. Mix until well combined.
- Whip the heavy cream in a separate bowl until soft peaks form.
- Gently fold the whipped cream into the cheesecake mixture.
- Pour the lime mousse filling over the cooled crust and smooth the top.
- Refrigerate for at least 240 minutes or overnight until set.
- Slice and serve chilled.
Notes
Garnish with fresh lime slices, lime zest, or whipped cream for an extra touch. Store leftovers covered in the fridge for 3 to 5 days.
