Description

A light and creamy cheesecake infused with refreshing lime flavors, perfect for warm days and special occasions.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1/4 cup lime juice
  • 1 tablespoon lime zest
  • 1/2 teaspoon vanilla extract
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter, then press into the bottom of a springform pan and bake for 10 minutes. Let cool completely.
  3. In another bowl, beat cream cheese until smooth, then add 1 cup sugar, lime juice, lime zest, and vanilla extract. Mix until well combined.
  4. Whip the heavy cream in a separate bowl until soft peaks form.
  5. Gently fold the whipped cream into the cheesecake mixture.
  6. Pour the lime mousse filling over the cooled crust and smooth the top.
  7. Refrigerate for at least 240 minutes or overnight until set.
  8. Slice and serve chilled.

Notes

Garnish with fresh lime slices, lime zest, or whipped cream for an extra touch. Store leftovers covered in the fridge for 3 to 5 days.
