Description

Chewy, chocolatey Rocky Road cookies packed with gooey marshmallows and crunchy cashews.


Ingredients

  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 1 cup cashews, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the softened butter, brown sugar, and granulated sugar together until smooth and fluffy.
  3. Beat in the eggs one at a time and stir in the vanilla extract.
  4. In another bowl, mix flour, baking soda, and salt; gradually blend this into the creamed mixture.
  5. Fold in the chocolate chips, mini marshmallows, and chopped cashews.
  6. Drop spoonfuls of dough onto ungreased baking sheets.
  7. Bake for 12 to 15 minutes until the edges are lightly browned.
  8. Allow cooling for a few minutes before transferring to wire racks to cool completely.
