Description

A refreshing and zesty Lemon Tart with a buttery, flaky crust that is perfect for any occasion.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 egg yolk
  • 1/4 cup water (as needed)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup freshly squeezed lemon juice
  • Zest of 2 lemons
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, powdered sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. Stir in the egg yolk and just enough water to form a dough.
  4. Roll out the dough and place it into a tart pan, trimming the edges as needed.
  5. Bake for 15 minutes or until lightly golden.
  6. In another bowl, whisk together the granulated sugar, eggs, lemon juice, and lemon zest.
  7. Pour the lemon filling into the baked crust.
  8. Bake for an additional 20 minutes until the filling is set.
  9. Allow to cool before serving.
  10. Optionally, top with whipped cream before serving.

Notes

Serve with a dollop of whipped cream or a sprinkle of powdered sugar. Fresh berries can be a great addition.
