A refreshing and zesty Lemon Tart with a buttery, flaky crust that is perfect for any occasion.
Ingredients

- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1 egg yolk
- 1/4 cup water (as needed)
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup freshly squeezed lemon juice
- Zest of 2 lemons
- 1/4 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the flour, powdered sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
- Stir in the egg yolk and just enough water to form a dough.
- Roll out the dough and place it into a tart pan, trimming the edges as needed.
- Bake for 15 minutes or until lightly golden.
- In another bowl, whisk together the granulated sugar, eggs, lemon juice, and lemon zest.
- Pour the lemon filling into the baked crust.
- Bake for an additional 20 minutes until the filling is set.
- Allow to cool before serving.
- Optionally, top with whipped cream before serving.
Notes
Serve with a dollop of whipped cream or a sprinkle of powdered sugar. Fresh berries can be a great addition.
