Description

Delightfully sweet Lemon Crinkle Cookies with a refreshing citrus kick, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter (softened)
  • 1 cup sugar
  • 1 large egg
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 58 drops yellow food coloring (optional)
  • 1/4 cup sugar (for rolling)
  • 3/4 cup powdered sugar

Instructions

  1. In a large bowl, combine the all-purpose flour, baking soda, and salt. Set aside.
  2. In the bowl of a stand mixer, beat together the softened butter and sugar until fluffy.
  3. Add in the egg, lemon juice, lemon zest, vanilla extract, and food coloring (if using). Mix until well combined.
  4. Gradually add the dry ingredient mixture to the stand mixer and mix until incorporated.
  5. Cover the bowl with plastic wrap and refrigerate the dough for about 2 hours.
  6. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  7. Using a small cookie scoop, roll the dough into balls.
  8. Roll each dough ball in regular sugar then in powdered sugar.
  9. Place the dough balls on the baking sheets, leaving about 2 inches between each. Bake for 10-12 minutes.
  10. Let them cool on the baking sheet for about 5 minutes before transferring them to a cooling rack.

Notes

For the best flavor, use fresh lemon juice and zest. Don’t skip the chilling step to help the cookies hold their shape.
