Description

Delightful lemon-flavored cookies that are soft, chewy, and dusted with powdered sugar.


Ingredients

  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder

  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy (2-3 minutes).
  3. Beat in the egg, fresh lemon juice, and lemon zest until well combined.
  4. Whisk together the flour, baking powder, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Chill the dough in the refrigerator for about 30 minutes.
  7. Roll the chilled dough into small balls, then coat each in powdered sugar.
  8. Place the sugar-coated balls on a baking sheet lined with parchment paper.
  9. Bake for 10 to 12 minutes, until the edges are lightly golden.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
