- 1/2 cup powdered sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and granulated sugar until light and fluffy (2-3 minutes).
- Beat in the egg, fresh lemon juice, and lemon zest until well combined.
- Whisk together the flour, baking powder, and salt in another bowl.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Chill the dough in the refrigerator for about 30 minutes.
- Roll the chilled dough into small balls, then coat each in powdered sugar.
- Place the sugar-coated balls on a baking sheet lined with parchment paper.
- Bake for 10 to 12 minutes, until the edges are lightly golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
