- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 16 oz cream cheese, softened
- 1 cup sugar
- 2 eggs
- 1/4 cup lemon juice
- 1 tbsp lemon zest
- 1 cup blueberries
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a baking dish.
- Combine the graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl and press firmly into the bottom of the prepared baking dish.
- Beat the cream cheese and 1 cup sugar together until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the lemon juice and lemon zest until smooth.
- Fold in the blueberries gently.
- Pour the mixture over the crust and spread evenly.
- Bake for 25-30 minutes until set and slightly golden on top.
- Cool at room temperature, then refrigerate for at least 2 hours before cutting into squares.
Notes
Serve topped with powdered sugar, whipped cream, or ice cream, and garnish with fresh blueberries or mint.
