Description

Delightful bars that combine creamy cheesecake with zesty lemon and sweet blueberries, perfect for summer.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 2 eggs
  • 1/4 cup lemon juice
  • 1 tbsp lemon zest
  • 1 cup blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a baking dish.
  2. Combine the graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl and press firmly into the bottom of the prepared baking dish.
  3. Beat the cream cheese and 1 cup sugar together until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the lemon juice and lemon zest until smooth.
  6. Fold in the blueberries gently.
  7. Pour the mixture over the crust and spread evenly.
  8. Bake for 25-30 minutes until set and slightly golden on top.
  9. Cool at room temperature, then refrigerate for at least 2 hours before cutting into squares.

Notes

Serve topped with powdered sugar, whipped cream, or ice cream, and garnish with fresh blueberries or mint.
