Description

Delightful cookies that combine the nostalgic flavor of buttered toast with the sweetness of jam, perfect for any time of day.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup your favorite fruit jam (strawberry, raspberry, etc.)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt, then gradually add to the butter mixture until just combined.
  5. Scoop about a tablespoon of dough, roll it into a ball, and place them on a lined baking sheet.
  6. Press into the center of each cookie dough ball to create a well.
  7. Fill each well with jam.
  8. Bake in the preheated oven for about 12-15 minutes or until the edges are golden brown.
  9. Let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

Experiment with different jam flavors and consider adding nuts for extra crunch.
