Instructions
- In a medium-sized bowl, mix together the coconut milk, chia seeds, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir well to combine all the ingredients.
- Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours or overnight until the chia seeds absorb the liquid and the mixture thickens.
- Once set, serve chilled topped with fresh fruit, nuts, or granola if desired.
