Description

Ingredients

  • ½ pound (2 sticks) unsalted butter, melted and cooled
  • 4 large eggs
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 tablespoon espresso powder (optional)
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 325°F (163°C) and butter a 9×13-inch baking dish.
  2. In a large mixing bowl, beat together the eggs and sugar for 5–10 minutes until pale and thick.
  3. Mix in vanilla extract and melted butter.
  4. Sift together cocoa powder, flour, espresso powder (if using), and salt in a separate bowl.
  5. Fold the dry ingredients into the egg mixture until just combined.
  6. Pour the batter into the prepared dish and place it in a larger pan filled with hot water for a water bath.
  7. Bake for 55–65 minutes until the top is crisp and the center remains soft.
  8. Let cool for about 10 minutes before serving.
