- 1 cup fresh strawberries, finely chopped
- ½ cup strawberry puree
- 4 cups powdered sugar
- ¼ cup strawberry puree (for frosting)
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans.
- Mix together the cake flour, baking powder, and salt in a medium bowl.
- Cream the softened butter and granulated sugar until light and fluffy.
- Add in the eggs one at a time, beating well after each addition, and then stir in the vanilla extract.
- Combine the wet and dry mixtures by alternating in parts with milk and sour cream.
- Fold in the chopped strawberries and strawberry puree to the batter.
- Bake for 25-30 minutes until a toothpick comes out clean.
- Cool the cakes in pans for 10 minutes before transferring to a wire rack.
- Beat the butter for the frosting until creamy, then gradually add powdered sugar and strawberry puree.
- Assemble the cake by frosting the first layer, placing the second layer on top, and covering with remaining frosting.
