Ingredients

  • 2 ½ cups cake flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • ½ cup whole milk
  • ½ cup sour cream
  • 1 cup fresh strawberries, finely chopped
  • ½ cup strawberry puree
  • 4 cups powdered sugar
  • ¼ cup strawberry puree (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans.
  2. Mix together the cake flour, baking powder, and salt in a medium bowl.
  3. Cream the softened butter and granulated sugar until light and fluffy.
  4. Add in the eggs one at a time, beating well after each addition, and then stir in the vanilla extract.
  5. Combine the wet and dry mixtures by alternating in parts with milk and sour cream.
  6. Fold in the chopped strawberries and strawberry puree to the batter.
  7. Bake for 25-30 minutes until a toothpick comes out clean.
  8. Cool the cakes in pans for 10 minutes before transferring to a wire rack.
  9. Beat the butter for the frosting until creamy, then gradually add powdered sugar and strawberry puree.
  10. Assemble the cake by frosting the first layer, placing the second layer on top, and covering with remaining frosting.
  11. Serve and enjoy!
