Description

A delightful dessert combining creamy coconut milk and nutritious chia seeds, topped with fresh mango and mint.


Ingredients

  • 1 cup coconut milk
  • 1/4 cup chia seeds
  • 2 tablespoons honey or maple syrup
  • 1 ripe mango, pureed
  • Fresh mango chunks for topping
  • Mint leaves for garnish

Instructions

  1. In a bowl, mix the coconut milk, chia seeds, and honey or maple syrup. Stir well until fully combined.
  2. Let the mixture sit for about 10 minutes, then stir again.
  3. Refrigerate the mixture for at least 2 hours or overnight until it thickens.
  4. Layer the chia pudding and pureed mango in cups or bowls.
  5. Top with fresh mango chunks and mint leaves, then serve cold.

Notes

Store the pudding cups tightly sealed in the refrigerator for up to 5 days. Add fresh fruits just before serving.
