Ingredients

- 2 cups rolled oats
- 1 cup nut butter (like peanut or almond butter)
- 1/2 cup honey or maple syrup
- 1/2 cup mini chocolate chips or dried fruits
- 1/2 cup nuts or seeds (optional)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a large bowl, mix together the rolled oats, nut butter, honey (or maple syrup), vanilla extract, and salt until well combined.
- Stir in the mini chocolate chips and nuts or seeds if using.
- Line an 8×8 inch baking dish with parchment paper.
- Press the mixture firmly into the dish in an even layer.
- Refrigerate for at least 120 minutes until set.
- Cut into bars and store in an airtight container.
Notes
For a chewy snack, aim for the bars to be slightly soft before cutting.
