Ingredients

  • 1 cup plain flour
  • 3/4 cup thick Greek yogurt
  • 1/2 cup extra-virgin olive oil
  • 2 tbsp honey
  • 1 large egg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp pure vanilla extract
  • 1/2 cup vanilla-flavored protein powder

Instructions

  1. Preheat your oven to 360°F (180°C).
  2. In a large mixing bowl, whisk together the egg, honey, Greek yogurt, vanilla extract, and olive oil until smooth.
  3. Add the plain flour, vanilla protein powder, baking powder, and baking soda to the wet mixture and gently stir until just combined.
  4. Fold the blueberries into the batter carefully.
  5. Spoon the batter into a lined muffin pan, dividing evenly for 12 muffins.
  6. Bake in the preheated oven for 15-20 minutes, until a toothpick inserted comes out clean.
  7. Let cool briefly in the pan before transferring to a wire rack.
