  • ¼ cup cocoa powder (Dutch-processed or natural)

Instructions

  1. In a medium mixing bowl, combine the softened butter, coconut sugar, and honey (add cinnamon for cinnamon crackers). Use an electric mixer to beat until creamy. Add the egg and vanilla extract, beating until smooth.
  2. In a small bowl, whisk together the baking powder and both types of flour (including cocoa powder for chocolate crackers).
  3. Slowly incorporate the dry mixture into the wet ingredients using a mixer until everything merges into a dough.
  4. Divide the dough into two parts, shape into disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  5. Preheat your oven to 350°F (180°C).
  6. Roll out one disk on a floured surface to about ⅛ to ¼ inch thick. Cut out shapes and place them on a baking sheet lined with parchment paper.
  7. Bake for about 12 minutes until the edges are lightly browned. Cool for at least 5 minutes before serving.
