Description

Delightful, fluffy mini soft cakes that are perfect for any occasion, sweetened just right and easy to make.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a mini muffin pan or line it with mini cupcake liners.
  3. In a medium bowl, whisk together the flour, baking powder, and salt.
  4. In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy.
  5. Beat in the eggs one at a time, then add the vanilla extract.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Scoop the batter into the prepared muffin pan, filling each cup about two-thirds full.
  8. Bake for 12-15 minutes or until a toothpick inserted comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
