- 1 1/2 cups shelled pistachios
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup cherry pie filling
Instructions
- Preheat oven to 350°F (175°C). Combine shelled pistachios and 1/4 cup granulated sugar in a food processor; pulse until finely ground. Mix in melted butter.
- Press mixture firmly into the bottom of a greased 9×9-inch baking pan. Bake for about 10 minutes until lightly golden.
- In a large bowl, beat cream cheese with 1/2 cup granulated sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
- Pour cream cheese mixture over baked pistachio crust. Drop spoonfuls of cherry pie filling on top and swirl.
- Bake for 30-35 minutes until edges are set but center is slightly jiggly. Cool on a wire rack before refrigerating.
- Refrigerate for at least 4 hours, preferably overnight. Cut into squares and serve.
Notes
Serve with drizzles of chocolate or caramel sauce and garnished with whipped cream and crushed pistachios.
