Description

Indulge in these delicious and visually stunning cheesecake bars layered with a crunchy pistachio crust and topped with cherry pie filling.


Ingredients

  • 1 1/2 cups shelled pistachios
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup cherry pie filling

Instructions

  1. Preheat oven to 350°F (175°C). Combine shelled pistachios and 1/4 cup granulated sugar in a food processor; pulse until finely ground. Mix in melted butter.
  2. Press mixture firmly into the bottom of a greased 9×9-inch baking pan. Bake for about 10 minutes until lightly golden.
  3. In a large bowl, beat cream cheese with 1/2 cup granulated sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  4. Pour cream cheese mixture over baked pistachio crust. Drop spoonfuls of cherry pie filling on top and swirl.
  5. Bake for 30-35 minutes until edges are set but center is slightly jiggly. Cool on a wire rack before refrigerating.
  6. Refrigerate for at least 4 hours, preferably overnight. Cut into squares and serve.

Notes

Serve with drizzles of chocolate or caramel sauce and garnished with whipped cream and crushed pistachios.
