Description

Delicious heart-shaped donuts filled with creamy strawberry cheesecake, perfect for special occasions or a sweet treat.


Ingredients

  • ¾ Cup (170g) Whole Milk (warmed to 105℉ or 40℃)
  • 2 ¼ Teaspoons Active Dry Yeast
  • 1/3 Cup + 1 Teaspoon (67g + 4g) Granulated White Sugar (divided)
  • 2 Cups (240g) Bread Flour
  • 2 Cups (240g) All-Purpose Flour
  • 6 Tablespoons (85g) Unsalted Butter (softened)
  • 2 Large Eggs + 1 Yolk (room temp)
  • 1/2 Teaspoon Fine Salt
  • 1 1/4 Cups (19g) Freeze Dried Strawberries
  • 8 Ounces (227g) Full-Fat Cream Cheese Block (room temp)
  • 1 Cup (113g) Powdered Sugar
  • 1/2 Cup (113g) Heavy Cream
  • 1 Teaspoon Vanilla Paste or Extract
  • 1 Cup (200g) Granulated White Sugar (for coating)
  • Frying Oil (canola, vegetable or shortening)

Instructions

  1. In a small bowl, combine warm milk, active dry yeast, and 1 teaspoon of sugar. Allow to bloom for 5-7 minutes until frothy.
  2. In the bowl of a stand mixer, add the yeast/milk mixture, 1/3 cup sugar, bread flour, all-purpose flour, softened butter, eggs, yolk, and salt. Mix until a rough dough forms.
  3. Fit your mixer with a hook attachment and knead the dough on medium speed for 15 minutes until elastic.
  4. Coat your hands with oil, form the dough into a ball, and let it rise in a warm place covered with plastic wrap for about 1 hour.
  5. Once risen, roll the dough out to ½ inch thickness. Use a heart-shaped cookie cutter to cut out donuts.
  6. Place donuts on parchment squares, cover loosely, and let proof for 30 minutes.
  7. Pulse freeze-dried strawberries in a food processor, then mix with cream cheese, powdered sugar, heavy cream, and vanilla until fluffy.
  8. Heat oil to 350ºF-360ºF. Fry 2-3 donuts at a time for 45 seconds on each side, then 20 additional seconds.
  9. Transfer to paper towels, coat in sugar, then fill with strawberry cheesecake mixture using a chopstick.
  10. Serve immediately for the best experience.
