Description

Ingredients

  • 1 tablespoon protein powder (or coconut flour)
  • 3 tablespoons maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1/3 cup peanut butter (or almond butter)
  • 3 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup chocolate chips
  • 1 teaspoon olive oil

Instructions

  1. In a mixing bowl, combine the almond flour, protein powder, maple syrup, olive oil, vanilla extract, and salt. Mix until it forms a dough-like consistency.
  2. Press this mixture into the bottom of muffin cups or a silicone muffin tray, creating an even layer. Bake at 350°F (175°C) for about 10 minutes or until slightly golden. Allow them to cool completely.
  3. In a separate bowl, mix together the peanut butter, maple syrup, olive oil, vanilla extract, and salt until smooth. Once the base is cooled, layer the caramel mixture on top of each cup, spreading it evenly.
  4. In a microwave-safe bowl, melt the chocolate chips and olive oil together in 30-second intervals, stirring until smooth and glossy. Pour the melted chocolate over the caramel layer, ensuring each cup is thoroughly covered.
  5. Place the cups in the fridge to set for about 30 minutes.

Notes

Drizzle extra chocolate on top or sprinkle sea salt for enhanced flavor and presentation. Store in an airtight container in the refrigerator for up to a week.
