- 1 cup sourdough discard
- 1/4 cup coconut sugar or your preferred sweetener
- 1/4 cup unsweetened applesauce
- 2 tablespoons unsalted butter (softened or coconut oil for dairy-free)
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 cups all-purpose flour (or a gluten-free alternative)
- Filling of choice (e.g., fruit preserves, cream cheese, or savory options)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the sourdough discard, coconut sugar, applesauce, softened butter (or coconut oil), salt, and vanilla extract. Mix until everything is well combined.
- Add in the baking soda and baking powder, mixing gently to incorporate.
- Gradually add the flour, one cup at a time, until a soft dough forms that’s not too sticky.
- On a lightly floured surface, roll out the dough to about 1/4 inch thick and cut into squares or circles.
- Place about a tablespoon of your chosen filling in the center of each piece of dough.
- Fold or pinch the edges to seal the kolaches, placing them seam-side down on the prepared baking sheet.
- Bake for 15-20 minutes, or until they turn a lovely golden brown.
- Allow to cool for a few minutes before serving.
Notes
Store leftovers in an airtight container for up to three days, or freeze for up to three months.
